Simple Grain Salad (Vegan and Oil-free)
This simple grain salad is a perfect cold lunch option. You can switch out the vegetables or add fresh herbs to customize it to your tastes. Feel free to use a different grain for a gluten free option.
1 cup uncooked spelt
1 & 1/2 cups cherry tomatoes, halved
1 small red onion, finely diced
1 large cucumber, diced (Peeled if desired)
15 oz can chickpeas, drained and rinsed
2-4 tbsp fresh lemon juice
1 tsp garlic powder
Salt and pepper to taste
Cook spelt according to the package instructions. Drain off any access liquid if needed and allow to cool completely.
Mix your spelt with all other ingredients then season with salt and pepper.
Chill in the fridge before serving.
