Crunchy Chocolate Peanut Butter Bars (Vegan & Gluten free)

These are the perfect sweet treat! They require only five ingredients and no baking involved. Feel free to substitute a different nut or seed butter if you have a peanut allergy.


Ingredients:

  • 1 cup natural peanut butter

  • 1 & 1/2 cups of your favorite corn flake cereal (Use certified gluten free if desired)

  • 1/4 cup maple syrup

  • 2/3-1 cup vegan chocolate chips (I used dark chocolate)

  • Flakey sea salt (Optional, but recommended)

Directions:

  1. Combine your maple syrup and peanut butter in a bowl. Slightly crush your corn flakes then add to your peanut butter mixture and mix well to combine. The mix will be very thick.

  2. Line or grease a baking dish then transfer your peanut mixture to the dish and using your fingers spread the mixture out evenly. Use a 8x8 pan for thinner bars or a smaller dish for thicker bars. Chill in the fridge for 2-3 hours.

  3. After chilling for 2-3 hours, cut into bars. You can make them as large or small as you want. Place back into the fridge.

  4. Line a plate or cookie sheet with parchment paper. Add your chocolate chips to a microwave safe bowl and microwave in 30 second intervals, mix between heating until your chocolate is completely melted.

  5. Using a fork, dip you peanut butter bars into the melted chocolate then place on the parchment paper and sprinkle with flakey salt. You can cover the entire bar or just part of the bar with chocolate.

  6. Place back into the fridge for about an hour before enjoying. Keep leftover bars in the fridge in an air tight container.
